Almonds are packed with healthy fats and antioxidants. Almond chutney can be a healthy addition to your diet.
Ingredients 1/2 cup of almonds 1/2 cup grated coconut 3-4 Kashmiri red chillies 1/2 teaspoon cumin seeds 2 tablespoons of coconut oil 1/2 cup water 5-6 curry leaves 1/2 teaspoon of urad dal 1 teaspoon of mustard seeds A pinch of asafoetida (hing) Salt to taste
Firstly, soak almonds in a bowl of hot water for 30 minutes. Then, strain the water and peel the skin.
Add the soaked almonds to a mixer with water, and grind it into a smooth paste.
Add chillies, grated coconut, and salt. Grind it again for 2-3 minutes until all the spices are combined.
Heat coconut oil in a small pan and add mustard seeds, urad dal, hing, curry leaves and red chillies to it.
Add the almond paste and stir it well to combine. You can serve this chutney with dosa or idilis.
